Ingredients

Tortillas

  • Large, sturdy flour tortillas (choose size according to preference)

Eggs and Dairy

  • Eggs, scrambled (about 8 large eggs for 6-8 burritos)
  • Shredded cheddar or Monterey Jack cheese (1 to 1½ cups)

Cooked Breakfast Meat

  • Sausage, bacon, or ham, cooked and chopped (about 1 to 1½ cups)

Diced Vegetables

  • Bell peppers, diced (1 cup)
  • Onions, diced (½ cup)
  • Tomatoes, diced (½ cup)

Spices and Herbs

  • Salt to taste
  • Black pepper to taste
  • Fresh cilantro, chopped (¼ cup)

Optional Additions

  • Beans (black beans or pinto beans, ½ to 1 cup, drained and rinsed)
  • Diced cooked potatoes (½ to 1 cup)

Instructions

  1. Prepare the filling: Cook your choice of breakfast meat in a skillet until browned and crisp. In the same or a separate pan, sauté diced bell peppers, onions, and tomatoes until softened and fragrant. Scramble eggs until just set. In a large bowl, combine the cooked eggs, meat, sautéed vegetables, shredded cheese, and optional beans or potatoes. Season the mixture with salt, pepper, and fresh cilantro to taste.
  2. Assemble the burritos: Lay one large tortilla flat on a clean surface. Spoon a generous portion of the prepared filling onto the center of the tortilla. Fold the edges inward and roll the tortilla tightly from one end to the other, ensuring the filling is fully enclosed to prevent spilling during freezing and reheating.
  3. Wrap for freezing: Wrap each burrito individually with parchment or wax paper to prevent sticking. Then, tightly wrap each wrapped burrito in a layer of aluminum foil, which protects against freezer burn and maintains freshness.
  4. Store properly: Place the wrapped burritos in a large freezer-safe sealable bag or airtight container. Label with the date and store in the freezer for up to 3 months for optimal quality and freshness.

Notes

  • Don’t overfill burritos; leave space near edges for tight rolling without bursting.
  • Allow fillings to cool slightly before assembling to prevent soggy tortillas.
  • Use parchment paper between burrito and foil to prevent sticking and simplify reheating.
  • Double wrap with foil to protect burritos from freezer odors, moisture, and damage.
  • Label and date the burritos to track freshness and consume within 3 months.
