Ingredients

Scale

Main Ingredients

  • 6 large flour tortillas
  • 8 large eggs
  • 8 oz cooked breakfast sausage or bacon, chopped
  • 1 cup shredded cheese (cheddar, pepper jack, mozzarella, or smoky cheddar)
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 1 cup black beans or refried beans, well drained
  • Salt, to taste
  • Pepper, to taste
  • Your favorite spices (e.g., cumin, chili powder, paprika), to taste

Instructions

  1. Prep the Fillings: Cook your chosen protein (sausage, bacon, or vegetarian alternative) in a skillet until browned and flavorful. In the same or separate pan, sauté diced onions and bell peppers until tender and slightly caramelized. In another pan, gently scramble the eggs, seasoning with salt and pepper to taste.
  2. Assemble Your Burritos: Warm the tortillas briefly in a pan or microwave to make them soft and pliable. Lay each tortilla flat and layer with scrambled eggs, cooked meat or alternative, sautéed veggies, a spoonful of drained beans, and a generous sprinkle of shredded cheese.
  3. Roll and Wrap: Fold the sides of the tortilla towards the center, then roll from one edge to the other, creating a tightly sealed burrito. Wrap each burrito individually in plastic wrap or parchment paper to keep freshness.
  4. Freeze for Future Mornings: Place the wrapped burritos in a single layer inside a large freezer-safe bag or container. Label with the date and freeze for up to 2 months, ready to heat whenever needed.

Notes

  • Don’t overfill the burritos to keep them easy to roll and prevent bursting.
  • Drain beans thoroughly to avoid sogginess after freezing and reheating.
  • Use fresh tortillas for better freezing and reheating results without cracking.
  • Cool fillings completely before wrapping to prevent condensation and freezer burn.
  • For extra protection, wrap burritos twice in parchment and foil to avoid freezer odors and maintain texture.
