Instructions

  1. Prepare the sushi rice. Cook sushi rice according to package instructions, preferably rinsing it first to remove excess starch. Allow the rice to cool slightly but keep it warm for easier assembly.
  2. Mix the seafood topping. In a bowl, combine shredded imitation crab meat or your chosen cooked seafood with mayonnaise, sriracha, chopped green onions, and a pinch of salt. Mix gently to achieve a creamy, balanced flavor without overmixing.
  3. Assemble the layers. Grease a baking dish well, then press the warm sushi rice evenly into the base, forming a solid and compact layer. Spread the seafood mixture evenly over the rice to ensure full coverage.
  4. Bake until bubbly. Preheat the oven to 375°F (190°C) and bake the dish for about 15 minutes or until the seafood topping is lightly browned and bubbling.
  5. Garnish and serve. Remove from the oven and top with chopped avocado, cucumber slices, crumbled nori sheets, and a drizzle of soy sauce or extra spicy mayo as desired. Let rest a few minutes before serving for best flavor and texture.
