Ingredients

Scale

Protein

  • 1.5 to 2 lbs chicken breasts or thighs (bone-in or boneless)

Vegetables

  • 1 to 1.5 cups fresh or frozen corn kernels
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced

Liquids & Broth

  • 4 cups chicken broth (preferably homemade)
  • Optional: 1/2 to 1 cup cream or milk (or plant-based alternative like coconut milk)

Herbs & Seasonings

  • 1 tsp dried thyme or 1 tbsp fresh thyme leaves
  • 2 tbsp fresh parsley, chopped (or 2 tsp dried parsley)
  • Salt and pepper to taste

Instructions

  1. Prepare Your Ingredients: Chop the vegetables into bite-sized pieces. Dice the onion, slice the celery and carrots, and if using fresh corn, cut it off the cob. Mince the garlic. This ensures even cooking and optimal flavor extraction.
  2. Layer Ingredients in the Slow Cooker: Place the chicken breasts or thighs at the bottom of the slow cooker. Layer the corn, sliced carrots, celery, diced onions, minced garlic, and herbs on top. Pour the chicken broth evenly over all ingredients to immerse them.
  3. Set and Cook: Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours. The slow, low heat tenderizes the chicken while blending the soup’s flavors deeply.
  4. Shred the Chicken: After cooking, remove the chicken pieces and shred them using two forks or chop finely. Return the shredded chicken to the soup and stir to distribute evenly.
  5. Final Touches: If you want a creamy soup, stir in cream, milk, or a plant-based alternative now. Adjust the seasoning with salt and pepper as needed, then warm the soup for a few minutes before serving.

Notes

  • Use bone-in chicken for extra flavor; boneless works better for easy shredding.
  • Add fresh herbs like parsley at the end for brighter flavor rather than cooking dried herbs too long.
  • For added sweetness and texture, add corn during the last hour if using fresh corn.
  • To thicken the soup, mix 1 tablespoon cornstarch with cold water and stir it in during the last 15 minutes of cooking.
  • Homemade chicken broth provides superior flavor compared to store-bought.
  • This soup freezes well—store in airtight containers for up to 3 months.
  • Reheat gently on low heat to preserve texture, adding broth or water if needed to loosen thickness.
