Instructions

  1. Prepare the chicken: Pound chicken breasts evenly to about ½ inch thickness to ensure uniform cooking. Cut into strips or leave whole according to preference.
  2. Set up the breading station: In one shallow bowl, combine flour, garlic powder, and paprika. In a second bowl, whisk the eggs. In a third bowl, mix panko bread crumbs with grated Parmesan cheese.
  3. Incorporate the pickles: Gently fold the finely chopped dill pickles into the breadcrumb and Parmesan mixture just before breading the chicken, or optionally sprinkle chopped pickles on top after cooking for tangy bursts.
  4. Bread the chicken: Coat each chicken piece first in the seasoned flour, shaking off excess. Dip into the beaten eggs and then firmly press into the pickle-parmesan-panko mixture ensuring an even, thick crust.
  5. Cook until golden and crispy: Heat oil in a skillet over medium heat. Fry chicken pieces for 4-5 minutes per side, or until golden brown and cooked through.
