Ingredients

Scale

Meat

  • 2 to 3 pounds chuck roast, cut into bite-sized cubes

Vegetables & Aromatics

  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 bell peppers, diced

Beans

  • 1 cup kidney beans, drained and rinsed
  • 1 cup black beans, drained and rinsed

Liquids & Base

  • 28 ounces crushed tomatoes
  • 2 cups beef broth

Spices

  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika (optional)
  • Salt and pepper, to taste

Optional Garnishes

  • Shredded cheese
  • Fresh cilantro
  • Sliced green onions
  • Sour cream

Instructions

  1. Prepare the Meat: Cut the chuck roast into bite-sized cubes and pat dry with paper towels to ensure better browning. Generously season with salt and pepper.
  2. Sear the Chuck Roast: Heat oil in a large pot over medium-high heat. Sear the meat on all sides until deeply browned, locking in the flavor and adding depth to your chili.
  3. Sauté Aromatics: Remove the meat from the pot. In the same pot, sauté diced onions, garlic, and bell peppers until soft and fragrant to create a flavorful base.
  4. Add Spices and Liquids: Return the browned meat to the pot, then sprinkle chili powder, cumin, and optional smoked paprika over everything. Stir to coat, then pour in crushed tomatoes and beef broth. Bring the mixture to a simmer.
  5. Simmer Until Tender: Cover the pot and let it simmer gently for about 2 hours, stirring occasionally, until the meat is fall-apart tender and flavors meld beautifully.
  6. Add Beans and Finish Cooking: Stir in the drained and rinsed kidney and black beans. Cook uncovered for another 20 to 30 minutes to thicken the chili and heat the beans through.

Notes

  • Use quality chuck roast with good marbling for tender and flavorful results.
  • Don’t skip searing the meat; it enhances the savory depth of the chili.
  • Simmer low and slow to bring out the best texture and flavors.
  • Adjust seasoning at the end to balance flavors perfectly.
  • Let the chili rest and develop flavor; it tastes better the next day.
