Ingredients

Scale

Chicken and Coating

  • 1 lb boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 1/2 cup all-purpose flour (or gluten-free flour for gluten-free option)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs, beaten
  • Vegetable oil, for frying

Sweet Asian Sauce

  • 1/3 cup honey
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp rice vinegar

Garnishes

  • 2 green onions, thinly sliced
  • 1 tbsp toasted sesame seeds

Instructions

  1. Prep the Chicken: Cut the chicken into bite-sized pieces for even cooking. Pat them dry with paper towels to ensure the coating adheres well and achieves maximum crispiness.
  2. Make the Coating: In a bowl, whisk together cornstarch, flour, salt, and pepper. In a separate bowl, beat the eggs. Dip each piece of chicken into the eggs, then coat evenly with the dry mixture, shaking off any excess for a light, crunchy crust.
  3. Fry the Chicken: Heat vegetable oil in a deep pan or fryer to 350°F (175°C). Fry the chicken pieces in batches for 4-5 minutes until golden brown and crispy. Drain on a wire rack to maintain crunch and remove excess oil.
  4. Prepare the Sweet Asian Sauce: In a small saucepan, combine honey, soy sauce, minced garlic, grated ginger, and rice vinegar. Simmer over medium heat, stirring frequently, until the sauce thickens slightly and becomes glossy, about 3-4 minutes.
  5. Toss and Serve: Place the crispy chicken in a serving bowl and pour the warm sauce over it. Toss gently to coat without breaking the crust. Garnish with chopped green onions and toasted sesame seeds before serving.

Notes

  • Pat chicken dry before coating to get extra crispy pieces.
  • Maintain oil temperature around 350°F (175°C) using a thermometer for best frying results.
  • Fry chicken in batches to prevent oil temperature drop and soggy coating.
  • Use a wire rack to drain fried chicken to keep it crispy longer.
  • Prepare the sauce while frying chicken to save time and serve fresh.
