Ingredients

Scale

Fish and Coating

  • 4 white fish fillets (cod, haddock, or tilapia), about 4-6 oz each
  • 1 cup all-purpose flour (or gluten-free flour for gluten-free option)
  • 1 cup panko breadcrumbs (or gluten-free breadcrumbs)
  • 2 large eggs
  • 1 cup buttermilk (or regular milk with 1 tsp lemon juice/vinegar)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder

Buns and Toppings

  • 4 soft sandwich buns (brioche, potato rolls, or classic hamburger buns)
  • 4 leaves lettuce, fresh and crisp
  • 4 slices tomato
  • Tartar sauce or aioli, as desired

Frying

  • Vegetable oil or canola oil, for deep frying

Optional Variations and Extras

  • Pickles, sliced avocado, or shredded cabbage
  • Cayenne pepper or hot sauce (for spicy twist)

Instructions

  1. Prepare the Fish: Rinse and pat dry your choice of white fish fillets, trimming any uneven edges to ensure uniform cooking.
  2. Make the Batter: In a bowl, whisk together buttermilk, eggs, salt, pepper, paprika, and garlic powder until smooth and flavorful, perfect for coating the fish.
  3. Coat the Fish: Dredge each fish fillet in flour first, then dip into the batter, and finally coat with panko breadcrumbs, pressing lightly to help the crumbs adhere evenly.
  4. Fry the Fish: Heat oil in a deep skillet or fryer to 350°F (175°C). Fry the coated fillets for 3-4 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate to drain excess oil.
  5. Assemble the Sandwich: Lightly toast the buns, spread tartar sauce or aioli on each bun side, layer with lettuce, tomato, and the crispy fish fillet, then place the top bun to complete the sandwich.

Notes

  • Oil temperature matters: Maintain 350°F for consistent crispiness and to avoid soggy or burnt crusts.
  • Don’t overcrowd: Fry fish in batches to ensure even cooking and a crispier finish.
  • Dry fish thoroughly: Pat the fish completely dry before breading to help the coating stick better.
  • Use fresh buns: Soft, fresh sandwich buns contrast nicely with the crispy fish texture.
  • Double dip for extra crunch: For an even crispier crust, dip fish in batter and panko twice before frying.
