Ingredients

Scale

Chicken Wings and Coating

  • 2 lbs fresh or thawed chicken wings with skin on
  • 1 tbsp aluminum-free baking powder
  • 1 tbsp olive oil

Cajun Seasoning Blend

  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cayenne pepper (adjust to taste)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper

Optional Additions

  • 1 tbsp fresh lemon juice (for finishing)
  • Optional variations: smoked paprika, chipotle powder, smoked salt, honey (for glaze), fresh rosemary or thyme

Instructions

  1. Prepare the Wings: Pat the chicken wings dry thoroughly with paper towels to remove any excess moisture, which is essential for achieving ultimate crispiness during baking.
  2. Toss with Baking Powder and Oil: In a large bowl, combine the wings with baking powder and olive oil. The baking powder helps dry the skin and creates the iconic crunch when baked.
  3. Apply the Cajun Seasoning: Sprinkle the homemade or store-bought Cajun seasoning evenly over the wings, ensuring each piece is well-coated. Use your hands to massage the spices into the skin for maximum flavor absorption.
  4. Arrange on a Baking Rack: Place the wings on a wire rack set over a baking tray. This allows hot air to circulate evenly around the wings, ensuring uniform cooking and crispy results.
  5. Bake Until Crispy: Preheat the oven to 425°F (220°C). Bake the wings for 40–45 minutes, flipping them halfway through to brown all sides evenly and achieve a perfect crispy texture.
  6. Add a Final Touch: Once the wings are out of the oven, optionally squeeze fresh lemon juice over them to enhance brightness and complement the spicy Cajun seasoning.

Notes

  • Dry wings completely before seasoning to promote crispy skin.
  • Use a wire rack to elevate wings for even air circulation and crispiness.
  • Do not skip the baking powder for best crispy results without altering flavor.
  • Flip wings halfway through baking for even browning and crunch.
  • Let wings rest for 5 minutes after baking to lock in juices and finish crisping.
