Ingredients

Scale

Main Ingredients

  • 2 boneless, skinless chicken breasts or thighs
  • 1/3 cup sun dried tomatoes (preferably oil-packed, finely sliced)
  • 1 cup heavy cream or half and half
  • 3 garlic cloves, minced
  • 1/2 cup chicken broth (gluten-free if required)
  • 1/3 cup grated Parmesan cheese
  • 2 tablespoons olive oil or butter
  • Salt and pepper, to taste
  • Optional: 1/4 teaspoon red pepper flakes

Garnishes and Add-ins

  • Fresh herbs (basil, parsley, or thyme), chopped
  • Optional: spinach or kale (1 cup fresh, stirred in last minutes)
  • Optional: mushrooms (1/2 cup, sautéed with garlic)

Instructions

  1. Prepare the chicken: Season the chicken breasts or thighs generously with salt and pepper. Heat olive oil or butter in a large skillet over medium-high heat. Sear the chicken until golden brown on both sides and cooked through, approximately 5-6 minutes per side. Remove the chicken from the skillet and set aside.
  2. Sauté garlic and sun dried tomatoes: In the same skillet, add the minced garlic and finely sliced sun dried tomatoes. Cook for 1-2 minutes until the garlic is fragrant and the tomatoes soften slightly, stirring frequently to prevent burning.
  3. Create the creamy sauce: Pour in the chicken broth to deglaze the skillet, scraping up the browned bits from the bottom. Add the heavy cream and grated Parmesan cheese, stirring constantly until the sauce thickens and becomes smooth.
  4. Combine chicken with sauce: Return the cooked chicken to the skillet, spoon some sauce over each piece. Let it all simmer together gently for a few minutes to allow the flavors to meld and the chicken to warm through.
  5. Add fresh herbs and adjust seasoning: Sprinkle chopped basil, parsley, or thyme over the dish. Taste and adjust seasoning with salt, pepper, and optional red pepper flakes. Serve hot directly from the skillet for a rustic presentation.

Notes

  • Use room temperature chicken for even cooking and moist results.
  • Don’t skip deglazing the skillet to incorporate flavorful browned bits into the sauce.
  • Simmer the sauce gently; avoid boiling to prevent curdling of cream.
  • Slice sun dried tomatoes finely for better flavor distribution and sauce texture.
  • Serve immediately as the sauce will thicken as it cools.
  • Leftovers can be refrigerated for up to 3 days or frozen up to 2 months.
  • Reheat gently to maintain creamy sauce texture, either on low stove heat or in microwave at medium power.
