Ingredients

Scale

Protein

  • 2 cups cooked chicken, shredded or diced (breast or thighs)

Grains

  • 1.5 cups white rice, cooked (day-old preferred)

Creamy Sauce

  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • 1 cup milk or cream

Cheese

  • 1 cup shredded mozzarella or cheddar cheese

Vegetables (Optional)

  • 1/2 cup peas, carrots, or broccoli (optional)

Seasonings

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs like parsley, thyme, or rosemary (optional)

Other

  • 1 tablespoon butter or oil for sautéing vegetables or adding richness

Instructions

  1. Prepare Your Ingredients: Cook the rice according to package instructions, preferably using day-old rice for better texture. Shred or dice the cooked chicken. Preheat your oven to 350°F (175°C).
  2. Mix the Creamy Sauce: In a large bowl, combine the cream of mushroom or chicken soup, milk or cream, garlic powder, onion powder, salt, pepper, and any fresh herbs. Stir well until smooth and creamy.
  3. Combine Chicken, Rice, and Sauce: Gently fold the cooked chicken, rice, and optional vegetables into the creamy sauce mixture until everything is evenly coated.
  4. Assemble in Baking Dish: Grease a casserole dish with butter or oil. Transfer the mixture into the dish and spread it out evenly. Sprinkle the shredded cheese evenly over the top.
  5. Bake to Perfection: Place the casserole in the preheated oven and bake uncovered for 30-40 minutes, until the top is golden brown and the casserole is heated through. If the top browns too quickly, cover loosely with foil.
  6. Rest Before Serving: Remove from the oven and let the casserole rest for 5-10 minutes to set before serving.

Notes

  • Use day-old rice to prevent mushiness during baking.
  • Gently fold ingredients to keep chicken and rice intact.
  • Cover with foil if top browns too fast for even cooking.
  • Add breadcrumbs or crushed crackers on top for a crunchy crust.
  • Let casserole rest after baking for better texture when slicing.
