Instructions

  1. Roast the Carrots: Preheat your oven to 400°F (200°C). Slice carrots into sticks or rounds, toss with olive oil, salt, and pepper, then spread on a baking sheet. Roast for 20 to 25 minutes until tender and caramelized around the edges, bringing out their natural sweetness.
  2. Cook the Linguine: While carrots roast, bring a large pot of salted water to a boil. Cook linguine according to package instructions until al dente. Drain, reserving about half a cup of pasta water, and set aside for later use to smooth the sauce.
  3. Prepare the Cowboy Butter: In a small bowl, soften the butter then stir in minced garlic, chopped parsley, lemon juice, salt, and pepper. This buttery mixture will melt over the steak and pasta for rich, garlicky flavor.
