Ingredients

Scale

Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • ¼ tsp salt

Wet Ingredients

  • ½ cup unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 2 tsp vanilla extract

Fresh Components

  • 1 to 1 ½ cups fresh strawberries, chopped (plus whole strawberries for garnish)

Chocolate Ganache

  • 8 oz quality dark chocolate, chopped
  • ¾ cup heavy cream

Additional Ingredients

  • Powdered sugar (for dusting or frosting incorporation)

Instructions

  1. Prepare the Cake Batter: Preheat your oven to 350°F (175°C). In a large bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. In a separate mixing bowl, cream the unsalted butter with granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Alternately incorporate the vanilla extract and buttermilk with the dry ingredients, mixing until you achieve a smooth, luscious batter.
  2. Bake the Cake Layers: Divide the batter evenly between two greased and lined 8-inch round cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Remove from the oven and let the cakes cool completely before assembling.
  3. Prepare the Chocolate Ganache: Heat the heavy cream gently until just steaming. Pour it over the chopped dark chocolate in a heatproof bowl. Let it sit for one minute, then stir gently until the mixture is smooth and glossy. Set aside to cool slightly, allowing it to thicken to a glaze consistency.
  4. Assemble the Cake: Place one cooled cake layer on a serving plate. Spread a generous layer of whipped cream mixed with chopped fresh strawberries or strawberry compote evenly over the layer. Add the second cake layer on top. Pour the chocolate ganache over the entire cake, letting it drip naturally down the sides. Decorate the top with whole fresh strawberries.
  5. Chill and Serve: Refrigerate the assembled cake for at least one hour to allow the ganache to set and the flavors to meld. Serve chilled or at room temperature for the best experience.

Notes

  • Use room temperature ingredients to ensure smooth batter and even baking.
  • Mix batter just until combined to keep the cake tender and fluffy.
  • Choose ripe, fragrant strawberries for the best flavor contrast with chocolate.
  • Chill ganache slightly before glazing to avoid it running off too quickly and to help it set beautifully.
  • Allow cake layers to cool completely before assembling to prevent ganache melting and maintain texture.
