Caramel

  • 1 cup Sugar

Instructions

  1. Prepare the Caramel: Melt sugar in a saucepan over medium heat until it turns a deep amber caramel. Immediately pour the caramel into the flan mold or ramekins, tilting to coat the bottom evenly, then let it set.
  2. Mix the Custard Ingredients: In a large bowl, whisk eggs, sweetened condensed milk, coconut milk, and cocoa powder until smooth. Add vanilla extract and a pinch of salt to balance flavors and enhance aromas.
  3. Pour and Cover: Pour the custard mixture over the set caramel in the mold. Cover with aluminum foil to prevent condensation during baking.
  4. Bake the Flanlight: Place the covered mold in a water bath inside a preheated oven at 325°F (163°C). Bake for 50-60 minutes until custard is just set but still slightly jiggly in the center.
  5. Cool and Chill: Remove from oven, cool at room temperature completely, then refrigerate for at least 4 hours or overnight for optimal texture and flavor.
  6. Serve: Run a knife around the edges, invert onto a serving plate letting caramel sauce flow over, garnish as desired, and enjoy immediately.
