Instructions

  1. Prep Your Ingredients: Wash and halve the Brussels sprouts. Peel and dice the sweet potatoes into bite-sized pieces. Trim any excess fat from the chicken and season with salt, pepper, rosemary, and thyme. Rinse the wild rice blend under cold water to remove impurities.
  2. Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add the finely chopped onions and minced garlic, sautéing until translucent and fragrant to build the flavor base.
  3. Assemble the Bake: In a large baking dish, combine the sautéed onion and garlic, diced sweet potatoes, halved Brussels sprouts, and rinsed wild rice. Nestle the seasoned chicken pieces on top. Pour the chicken broth evenly over the mixture.
  4. Bake to Perfection: Cover the dish tightly with foil and bake in a preheated oven at 375°F (190°C) for 50-60 minutes. Remove the foil for the last 10-15 minutes to allow the chicken skin to crisp and vegetables to caramelize.
