Chicken Pot Pie Pasta is a cozy, creamy pasta dish that captures the comforting flavors of a classic chicken pot pie. Featuring tender chicken, a rich and velvety sauce, and a medley of vegetables, this easy one-pot meal is perfect for busy weeknights or whenever you crave a warm, hearty dish that’s both satisfying and kid-friendly.

Ingredients

Scale

Protein

  • 1 lb chicken breast or thighs, diced

Pasta

  • 8 oz penne or rotini pasta

Vegetables

  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Liquids & Dairy

  • 1 cup heavy cream or milk
  • 1 cup chicken broth
  • 3 tbsp butter

Thickening & Seasonings

  • 3 tbsp all-purpose flour (or gluten-free flour for GF version)
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp dried thyme

Instructions

  1. Cook the pasta: Start by boiling your pasta in salted water until it’s al dente. Drain and set aside, reserving a little pasta water to help loosen the sauce later if needed.
  2. Sauté chicken and vegetables: In a large skillet, melt butter over medium heat and cook diced chicken until slightly browned and cooked through. Remove the chicken, then sauté onions, garlic, and mixed vegetables in the same pan until tender.
  3. Make the creamy sauce: Add more butter to the pan and whisk in flour to create a roux. Slowly pour in chicken broth and cream while whisking continuously until the sauce thickens to a silky smooth texture.
  4. Combine everything: Add the chicken back to the pan along with the cooked pasta. Gently mix everything to coat the pasta and chicken evenly in the creamy sauce.
  5. Season and serve: Finish with salt, pepper, and thyme to taste. Give the dish a final stir, then serve hot with your favorite garnishes.

Notes

  • Use fresh vegetables like peas and carrots for the best natural sweetness and texture.
  • Don’t skip the roux, as it is essential for thickening and achieving the classic creamy sauce.
  • Cook pasta al dente to avoid a mushy final dish.
  • Reserve some pasta water to adjust the sauce consistency if needed.
  • Let the dish rest for a few minutes before serving to meld the flavors.
