Cheesy Sausage Biscuit Bites

Cheesy Sausage Biscuit Bites are a savory, gooey snack featuring seasoned ground breakfast sausage and melted cheese wrapped in fluffy biscuit dough. Perfect for quick breakfasts, game days, or anytime you crave a comforting and satisfying finger food that’s easy to make and customizable to your taste.

Ingredients

Scale

Sausage Mixture

  • 1 lb ground breakfast sausage
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • Optional: chopped jalapeños or red pepper flakes for spice
  • Optional: 1 tsp maple syrup or honey for a sweet-savory twist
  • Optional herbs: fresh parsley, chives, rosemary, thyme, or sage (as preferred)

Cheese

  • 1 cup shredded cheddar cheese or cheese blend (cheddar, mozzarella, pepper jack, or gouda)

Biscuit Dough

  • 1 can (about 16 oz) store-bought biscuit dough (or gluten-free biscuit dough for dietary needs)

Instructions

  1. Cook the Sausage: Heat a skillet over medium heat. Add the ground breakfast sausage and cook until browned and fully cooked, breaking it into crumbles. Drain any excess fat to prevent greasiness. Stir in onion powder, garlic powder, salt, pepper, and any optional spices or sweeteners. Remove from heat.
  2. Prepare the Biscuit Dough: Open the can of biscuit dough and separate into individual biscuits. Flatten each biscuit slightly with your hands to form a small round base ready for filling.
  3. Assemble the Bites: Spoon a small amount of the cooked sausage mixture onto the center of each flattened biscuit. Add a generous pinch of shredded cheese on top of the sausage. Carefully fold or roll the dough around the filling, sealing edges tightly with a little water to prevent leaks.
  4. Bake to Perfection: Place the assembled bites seam-side down on a baking sheet lined with parchment paper. Bake in a preheated oven at 375°F (190°C) for 12-15 minutes, or until the biscuits are golden brown and the cheese inside is bubbly and melted.
  5. Cool and Serve: Allow the biscuit bites to cool slightly before serving to avoid burning from the hot cheese filling. Garnish with freshly chopped parsley or chives if desired, and enjoy with your favorite dips or sides.

Notes

  • Don’t overfill each biscuit with sausage or cheese to avoid dough bursting and leaks during baking.
  • Seal dough edges well using a little water to keep fillings inside.
  • Choose a melty cheese like cheddar or Monterey Jack for the best creamy texture.
  • Keep biscuit dough cold before assembling to make handling easier and ensure fluffy baking results.
  • Watch baking time carefully to prevent drying out the biscuits; remove when golden and bubbly.
