  • 2 tbsp olive oil

  • 1 tsp sugar (to activate yeast)

Filling

  • 1 ½ cups shredded mozzarella cheese (or preferred cheese blend)

Butter Topping

  • 4 tbsp unsalted butter, softened
  • 2 cloves fresh garlic, minced
  • Optional: 1 tbsp chopped fresh parsley
  • Optional: 1 tsp dried oregano

Instructions

  1. Prepare the Dough: In a small bowl, mix warm water, active dry yeast, and sugar. Let it sit for 5–10 minutes until frothy. In a large bowl, combine flour, garlic powder, and salt. Add the yeast mixture and olive oil, then knead until the dough is smooth and elastic. Cover and let it rise in a warm spot for about 1 hour or until doubled in size.
  2. Shape and Fill the Breadsticks: Roll the risen dough on a floured surface into a rectangle. Cut into strips about 1 inch wide. Place a generous line of shredded cheese along the center of each strip, then fold the dough over and pinch the edges tightly to seal the cheese completely inside.
  3. Add Garlic Butter Topping: Mix softened butter with minced fresh garlic and optional herbs. Brush this mixture generously over the top of each sealed breadstick to infuse flavor and help achieve a golden crust.
  4. Bake Until Golden: Place breadsticks on a baking sheet lined with parchment paper. Bake in a preheated oven at 400°F (200°C) for approximately 15 minutes or until golden brown, crispy at the edges, and the cheese is melted inside.
  5. Serve Warm: Remove from oven and let breadsticks cool for 1–2 minutes before serving to keep the cheese melty and the breadsticks easy to handle.
