Ingredients

Scale

Main Ingredients

  • 500g fresh cauliflower florets (medium-sized)
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon chili flakes (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon fresh lemon juice

Optional Garnishes and Variations

  • Fresh herbs (parsley, cilantro, or chives), chopped
  • Toasted cashews or almonds
  • Grated Parmesan or vegan cheese
  • Herbs and lemon zest (basil, thyme, rosemary)

Instructions

  1. Prepare the Cauliflower: Wash the cauliflower thoroughly and cut into evenly sized medium florets to ensure uniform cooking and optimal texture.
  2. Blanch the Cauliflower: Bring a large pot of salted water to a boil, then add the cauliflower florets. Blanch for 3-4 minutes until slightly tender but still crisp to preserve texture and color. Drain well.
  3. Melt the Butter and Sauté Garlic: Heat a large skillet over medium heat and gently melt the butter. Add the minced garlic and sauté until fragrant and golden, infusing the butter with rich aroma.
  4. Add Cauliflower and Spices: Add the blanched cauliflower to the skillet. Toss with turmeric powder, chili flakes (if using), salt, and freshly ground black pepper. Stir gently to evenly coat each floret in the buttery seasoning.
  5. Finish Cooking: Continue cooking the cauliflower in the skillet for another 5-7 minutes, allowing it to develop a slight golden edge while remaining tender. Remove from heat and squeeze fresh lemon juice over the dish to brighten the flavors.

Notes

  • Choose fresh cauliflower heads that are firm and white for the best flavor and texture.
  • Do not overcook the cauliflower; keep it slightly crisp to avoid mushiness and retain nutrients.
  • Use medium heat when melting butter to prevent burning and bitterness.
  • Season gradually, adjusting salt and spices near the end to balance flavors perfectly.
  • Always use fresh lemon juice to add a fresh, bright lift that complements the richness.
