Ingredients

Scale

Chicken

  • 1 lb chicken tenders

Coating

  • 1/2 cup all-purpose flour (or almond flour for gluten-free)
  • 1/2 cup breadcrumbs (use gluten-free breadcrumbs if needed)
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Binding

  • 2 large eggs, beaten

Sauce

  • 3/4 cup buffalo sauce (adjust for spice preference)

Cooking

  • Oil for frying (vegetable or canola) or baking spray

Instructions

  1. Prepare the Chicken: Cut chicken tenders into thin strips if not pre-cut and pat dry with paper towels to help the coating adhere better.
  2. Mix the Coating: In a shallow bowl, combine flour, breadcrumbs, paprika, garlic powder, salt, and black pepper. In another bowl, beat the eggs thoroughly.
  3. Coat the Chicken: Dip each chicken strip first into the beaten eggs, then dredge thoroughly in the dry flour and breadcrumb mixture. Press gently so the coating sticks well. For extra crunch, repeat the egg and dry mix dip once more.
  4. Cook the Fries: Heat oil in a deep frying pan to 350°F (175°C). Fry chicken strips in batches until golden brown and cooked through, about 4–5 minutes each batch. Alternatively, preheat oven to 425°F (220°C) and bake strips on a greased or sprayed baking sheet for 20 minutes, flipping halfway through. Air fryer cooking at 400°F (200°C) for 15-20 minutes also works well for a healthier option.
  5. Toss in Buffalo Sauce: While still hot, place the crispy chicken fries in a large bowl and toss with warmed buffalo sauce until evenly coated, ensuring every fry is infused with the signature spicy tang.
  6. Serve Immediately: Serve hot with cool ranch or blue cheese dressing for dipping. Garnish optionally with chopped parsley or green onions, and celery sticks on the side for added freshness.

Notes

  • Dry chicken strips well to help the coating stick and prevent sogginess.
  • For best flavor, use fresh buffalo sauce made with butter and hot sauce.
  • Maintain oil temperature at 350°F to avoid greasy, undercooked fries.
  • Double dipping the chicken in egg and dry mix gives extra crispy fries.
  • Fry in batches to avoid overcrowding and ensure even cooking.
