Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts

Pasta

  • 8 ounces penne or rotini pasta

Bruschetta Topping

  • 2 cups fresh tomatoes (Roma or cherry), finely diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Finishing Ingredients

  • 1/3 cup freshly grated Parmesan cheese
  • Additional fresh basil leaves for garnish
  • Olive oil or balsamic glaze for drizzling (optional)

Instructions

  1. Prepare the Bruschetta Topping: Finely dice the fresh tomatoes and chop the basil leaves. In a bowl, combine the tomatoes, basil, minced garlic, a splash of extra virgin olive oil, and balsamic vinegar. Season with salt and pepper to taste. Set aside to allow the flavors to meld while preparing the rest of the dish.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne or rotini pasta and cook according to package instructions until al dente. Drain the pasta and drizzle with a little olive oil to prevent sticking. Set aside.
  3. Cook the Chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat. Cook the chicken for 5-7 minutes per side, or until golden brown and cooked through with no pink inside. Remove from heat and let rest for a few minutes before slicing into bite-sized pieces.
  4. Combine Pasta, Chicken, and Bruschetta: In the skillet or a large mixing bowl, gently toss together the cooked pasta, sliced chicken, and bruschetta topping to evenly distribute the flavors. Add freshly grated Parmesan cheese and additional basil leaves if desired. Stir gently to combine.
  5. Serve Warm: Plate the Bruschetta Chicken Pasta, drizzle with extra olive oil or balsamic glaze if desired, and enjoy immediately for the freshest taste.

Notes

  • Use ripe tomatoes for the best, freshest bruschetta flavor.
  • Do not overcook chicken to keep it juicy and tender.
  • Reserve a cup of pasta water before draining to loosen the sauce if needed.
  • Chop herbs finely to release maximum aroma and flavor.
  • Serve immediately as bruschetta flavors are best fresh.
