Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tbsp olive oil (for cooking chicken)

Bruschetta Topping

  • 1 cup cherry tomatoes, chopped
  • 1/4 cup fresh basil, chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper, to taste

Pasta & Cheese

  • 8 oz penne or rigatoni pasta
  • 4 oz mozzarella cheese, sliced
  • 1 tbsp olive oil (for tossing pasta)

Instructions

  1. Prepare the Bruschetta Topping: Chop the cherry tomatoes and fresh basil. Gently mix them with the minced garlic, olive oil, balsamic vinegar, salt, and pepper. Let the mixture marinate to blend flavors while preparing other components.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions. Drain thoroughly and toss with olive oil to prevent sticking. Set aside.
  3. Cook the Chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook the chicken until golden brown and cooked through, about 5-7 minutes per side depending on thickness. Let rest for a few minutes, then slice evenly.
  4. Assemble the Stack: On each plate, layer a base of pasta, then a slice of chicken, a spoonful of bruschetta topping, and slices of mozzarella cheese. Repeat the layers to create a visually appealing stack showcasing all ingredients.
  5. Melt the Cheese: Place the assembled stacks under a broiler or in a hot oven for a few minutes just until the mozzarella melts and the bruschetta topping is warmed, ensuring the topping does not get soggy.

Notes

  • Use ripe tomatoes to ensure authentic bruschetta flavor.
  • Cook pasta al dente to maintain texture and structure.
  • Allow chicken to rest after cooking for tender, juicy slices.
  • Layer gently to keep your stack intact without compressing it.
  • Broil cheese quickly to melt without overcooking the fresh bruschetta topping.
