Ingredients

Scale

For the Patties

  • 1 lb ground beef (80/20 blend)
  • 1/2 cup bread crumbs (or almond flour for low-carb)
  • 1 large egg
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme (or rosemary/sage as variation)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Mushroom Gravy

  • 8 oz sliced cremini or white mushrooms
  • 1 clove garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 cups beef broth
  • 1 teaspoon cornstarch mixed with 1 tablespoon cold water (optional, for thickening)
  • Oil or butter for sautéing

Instructions

  1. Prepare the Beef Mixture: In a large bowl, combine ground beef, bread crumbs, egg, Worcestershire sauce, finely chopped onion, minced garlic, paprika, thyme, salt, and pepper. Mix gently until just combined to maintain tenderness.
  2. Shape the Patties: Divide the mixture into equal portions and form oval-shaped patties about half an inch thick, smoothing edges for even cooking.
  3. Brown the Patties: Heat a skillet over medium-high heat with a splash of oil. Sear patties for 3-4 minutes per side until golden brown crust forms, locking in juices.
  4. Make the Mushroom Gravy: Remove patties from skillet and set aside. In the same pan, sauté sliced mushrooms until tender, add minced garlic and Worcestershire sauce. Pour in beef broth, scraping brown bits off the pan, and simmer gently.
  5. Combine and Simmer: Return patties to the skillet, nestle in the gravy, reduce heat to low, cover, and simmer for about 10 minutes until patties are cooked through and flavors meld.

Notes

  • Use fresh ground beef and handle the mixture lightly to avoid dense patties.
  • Cast iron or heavy skillet recommended for better browning.
  • To thicken gravy, stir in cornstarch slurry during simmering.
  • Let patties rest off heat a few minutes before serving to retain juices.
  • Do not skip Worcestershire sauce; it adds essential umami depth.
