Instructions

  1. Prepare the shrimp mixture: Finely chop the peeled shrimp until almost paste-like but leaving small bits for texture. In a bowl, combine chopped shrimp, green onions, egg white, soy sauce, minced garlic, grated ginger, sesame oil, and white pepper. Mix thoroughly until a uniform, seasoned paste is formed.
  2. Prep the bread: Trim crusts off the white bread slices if desired, then cut each slice into triangles or rectangles. Lightly brush each piece with a thin layer of oil or melted butter to promote golden crisping in the oven.
  3. Top the bread: Spread a generous and even layer of the shrimp mixture over each bread piece, smoothing it with the back of a spoon. Press down firmly so the topping adheres well to the bread.
