Instructions

  1. Prepare the Filling: In a bowl, combine shredded chicken, cheese, cumin, garlic powder, chili powder, finely chopped onion, minced garlic, fresh cilantro, and lime juice. Mix well until the flavors are evenly distributed.
  2. Warm the Tortillas: Slightly warm tortillas in the microwave or on a skillet for 20-30 seconds each until pliable and easy to roll, preventing cracking.
  3. Fill and Roll Taquitos: Place about 1 tablespoon of filling down the center of each tortilla. Roll tightly, folding in the sides to seal the filling inside. Place seam side down on a parchment-lined baking sheet.
  4. Brush with Oil: Lightly brush or spray the rolled taquitos with olive oil to ensure a golden, crispy finish when baked.
