Baked Cheesy Mushroom Casserole

Baked Cheesy Mushroom Casserole is a warm, comforting one-dish meal combining tender sautéed mushrooms, rich melted cheddar cheese, and a creamy mixture baked to a golden, bubbly perfection. This versatile casserole is simple to prepare with pantry staples and fresh produce, perfect for weeknight dinners, family meals, or potlucks with minimal cleanup and irresistible flavors.

Ingredients

Scale

Mushroom Mixture

  • 1 lb fresh mushrooms (cremini, white button, or mixed), cleaned and sliced
  • 1 cup chopped onions
  • 2 cloves garlic, minced
  • 2 tbsp butter

Creamy Cheese Mixture

  • 1 cup sharp cheddar cheese, shredded
  • 1 cup heavy cream or sour cream
  • 2 tbsp fresh herbs (parsley or thyme), chopped
  • Salt, to taste
  • Black pepper, to taste

Topping

  • 1/2 cup breadcrumbs (or gluten-free crumbs/crushed nuts for gluten-free option)
  • 1/4 cup shredded sharp cheddar cheese

Instructions

  1. Prepare the veggies: Clean and slice the mushrooms. Sauté mushrooms with minced garlic and chopped onions in butter over medium heat until tender and golden, about 5-7 minutes. This unlocks rich mushroom flavors and softens the onions.
  2. Make the creamy cheese mixture: In a separate bowl, combine the heavy cream or sour cream with shredded cheddar cheese, fresh herbs, salt, and pepper. Stir until smooth and well blended.
  3. Combine all ingredients: Mix the sautéed mushroom and onion mixture into the cheese mixture, ensuring every piece is coated with the creamy goodness to create the savory casserole filling.
  4. Assemble and top: Spread the mixture evenly in a greased casserole dish. Sprinkle breadcrumbs evenly on top, then add a little more shredded cheddar cheese to create a crunchy, golden crust.
  5. Bake until bubbly: Preheat the oven to 350°F (175°C). Bake the casserole for 25 to 30 minutes, or until the top is golden brown and bubbly. Let it cool slightly before serving for best texture.

Notes

  • Use fresh mushrooms to avoid excess moisture and sogginess in the casserole.
  • Don’t skip sautéing mushrooms and onions; it deepens the flavor dramatically.
  • Mixing different cheeses, such as cheddar with mozzarella or gruyere, can add complexity and creaminess.
  • Allow the casserole to rest before serving to help it set and make slicing easier.
  • Taste and adjust seasoning of the cheese mixture before baking for perfect flavor balance.
