Instructions

  1. Prep the Chicken: Cut boneless chicken breasts into bite-sized pieces for even cooking and to allow the sauce to penetrate every morsel.
  2. Combine Ingredients: In a large mixing bowl, stir together the uncooked rice, condensed cream of mushroom soup, chicken broth, frozen peas and carrots, onion powder, garlic powder, salt, and black pepper until well combined.
  3. Assemble the Casserole: Pour the rice mixture into a greased baking dish, then evenly top with the chicken pieces. Cover tightly with foil to lock in moisture while baking.
  4. Bake Until Tender: Bake the casserole at 350°F (175°C) for 50-60 minutes, or until the rice has absorbed the liquid and the chicken is fully cooked. Remove the foil during the last 10 minutes to allow the top to brown slightly.
  5. Add Cheese and Finish Baking: Sprinkle shredded cheddar cheese over the hot casserole, then return it to the oven uncovered for an additional 5-7 minutes until the cheese is melted and bubbly.
