Instructions

  1. Prepare the chicken: Season chicken pieces with salt, pepper, garlic powder, and onion powder. Lightly sear in butter or olive oil over medium heat until just golden on the outside to enhance flavor and seal in juices.
  2. Combine the rice and sauce: In a large bowl, mix uncooked rice, cream of mushroom soup, sour cream (or Greek yogurt), chicken broth, and a pinch of seasoning until well combined. This mixture will create a creamy base ensuring tender rice.
  3. Assemble the casserole: Grease a casserole dish lightly. Transfer the rice mixture into the dish evenly. Nestle the seared chicken pieces on top of the rice mixture. Sprinkle shredded cheese evenly over the top.
  4. Bake it to perfection: Cover the casserole tightly with aluminum foil. Bake in a preheated oven at 375°F (190°C) for 45 minutes. Remove the foil and bake for an additional 10 minutes to allow the cheese to melt and brown slightly for a golden finish.
